Vegan “Cheesy” Cauliflower Popcorn with Green Hot Sauce

Course Appetizer

Ingredients
  

  • 400 ml can coconut cream
  • 2/3 cup (85g) arrowroot flour
  • 1 cup (110g) almond meal
  • 1/2 cup (20g) nutritional yeast
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp ground turmeric
  • 1 tsp garlic powder
  • 1 large cauliflower head, cut into bite sized florets(*see Waste Not Tip)
  • olive oil spray
  • salt and pepper, to taste

GREEN HOT SAUCE

  • 1/3 cup (80ml) light olive oil
  • 1/4 cup (50g) pickled jalapeno
  • 2 tsp finely grated lime zest
  • 1 tbsp lime juice, plus extra lime for garnish
  • 1 cup firmly packed coriander leaves, plus extrafor garnish

Instructions
 

  • Preheat oven to 200°C on the Airfryer function. Lightly grease air fryertray with olive oil spray
  • In a large bowl, combine coconut cream, arrowroot and salt and pepperto taste; mixing well to form a thick batter. In a separate bowl mix almondmeal, nutritional yeast, paprika, turmeric, garlic powder, salt and pepperto taste.
  • Dip cauliflower florets in batter, then into almond meal mixture, coatingwell. Transfer to air fryer tray and repeat with remaining florets.
  • Bake for 20 minutes, or until golden brown and crisp.
  • Meanwhile, blitz all the ingredients for green hot sauce in a foodprocessor or high-speed blender until really smooth. Season with saltand pepper.
  • Transfer crispy cauliflower popcorn pieces to a serving platter and seasonwith salt and pepper. Serve with green hot sauce, coriander leaves andlime cheeks.
