Spiced Beechwood Sour Cherry Chutney

Ingredients
  

  • 550 g fresh Beechwood cherries, pitted
  • 3 (150g) sweet white onions, finely chopped
  • 1 medium (100g) green capsicum, finely chopped
  • 1 medium (100g) red capsicum, finely chopped
  • 3/4 cup (90g) dark brown sugar
  • 3 tbsp (60ml) aged balsamic vinegar
  • 1 tbsp (20g) fresh ginger, peeled and grated
  • 2 tsp orange zest, grated
  • 1/3 cup (70ml) fresh orange juice
  • 1/2 tsp (5ml) rose water
  • 1/2 tsp ground cardamom
  • 1/4 tsp sea salt flakes
  • 1/4 tsp chilli flakes
  • 1/4 tsp allspice
  • 1/2 cinnamon stick
  • 1 sprig of thyme
  • 1 star anise
  • 1 clove
  • 3/4 cup (190ml) water

Instructions
 

  • Place all ingredients, except the water, into amedium-sized heavy bottom pan and bring tothe boil on high heat for 5 minutes.
  • Turn heat down to medium-low and simmer for45 minutes, stirring every 5 minutes.
  • Keep simmering for another 20 minutes, thenadd 1/2 cup (125ml) water. Simmer for a final 35minutes and add the final 1/4 (60ml) cup of water.
  • Let the mixture cool down, then fill your sterilisedjars with mixture and screw the airtight lid on.
  • Chutney can be enjoyed immediately or keptrefrigerated for up to 3 months.
