Ingredients
  

PASSIONFRUIT ICE CREAM

  • 600 ml thickened cream
  • 395 g can sweetened condensed milk
  • 1 1/2 cups passion fruit pulp (about 10 passionfruit)
  • 2 tsp vanilla bean paste
  • 1 cup (180g) white chocolate choc chips

COOKIES

  • 125 g butter, softened
  • 1 cup (220g) caster sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 1/2 cups (225g) self-raising flour, sifted

Instructions
 

  • PASSIONFRUIT ICE CREAM: Combine cream, sweetened condensedmilk, passion fruit and vanilla in the bowl of an electric mixer fitted with awhisk attachment. Beat on medium speed for 10 minutesor until light and fluffy. Transfer to a loaf tin measuring 30cm x 11cm(or 2L/8-cup capacity). Cover with plastic wrap and freeze for 4 hours,or place in the blast chiller for 30 minutes, then transfer to the freezeruntil needed.
  • Preheat oven to 210°C, fan-forced. Line an oven tray with baking paper.Spread white chocolate bits on prepared tray and roast for 3 minutes oruntil golden brown. Set aside to cool. Place in a food processor bowl andprocess until mixture resembles coarse breadcrumbs. Reduce oven to170°C.
  • COOKIES: In the bowl of an electric mixer fitted with the paddleattachment, beat butter and sugar for 3 minutes on medium speed untilwell combined and creamy. Add egg and vanilla, beat until combined. Addflour, mix until just combined. Use your hands to bring dough together
  • Divide dough into 3 portions; roll each portion into a 4cm diameter rolland wrap tightly with plastic film. Freeze for 1 hour or blast freeze for15 minutes.
  • Line 3 oven trays with baking paper. Remove cookie dough from thefreezer and remove the plastic wrap. Slice dough into 1cm thick discs,arrange on prepared trays leaving a 4cm space between cookies. Aim tohave at least 40 individual cookie discs.
  • Bake in oven for 12 minutes, or until lightly golden. Transfer to a coolingrack to cool completely.
  • To assemble ice cream sandwiches, place a scoop of ice-cream betweentwo cookies, press gently to flatten and roll in white chocolate crumb.
