Course Dessert

Ingredients
  

  • 3 cups finely chopped pecans
  • 1 stick butter
  • 8 ounces powdered sugar
  • 1 can (14 ounces) Eagle Brandsweetened condensed milk
  • 7 ounces flake coconut
  • 8 ounces baking chocolate(in 1 ounce squares)
  • 2 ounces baking paraffin

Instructions
 

  • Melt butter and add pecans. Mix in a small bowl and set aside
  • Sift powered sugar and mix with sweetened condensed milk in largebowl.
  • Add butter/pecan mixture to sugar/milk mixture, stir
  • Add coconut, stir.
  • Place tablespoon-size pieces onto wax paper and roll each into aball. Refrigerate overnight.
  • Melt chocolate and paraffin in a double boiler or microwave
  • Drop refrigerated balls into melted chocolate and roll around witha spoon until covered. Work quickly so the chocolate mixture doesnot harden in the bowl. Dip again if needed to cover entire piece ofcandy. Place dipped pieces on waxed paper to cool.
  • Store in a covered metal tin or plastic container. Do not refrigerate.
  • The chocolate will not cover the candy or harden on a rainy day. Waituntil the sun is shining!
