Ingredients
  

  • 2 large aubergines
  • 1/2 white scamorza cheese(or mozzarella)
  • 10 tomatoes
  • 1/2 clove of garlic
  • Small handfulof breadcrumbs
  • 20 basil leaves
  • 1/2 tsp salt (optional)
  • 1/4 tsp pepper
  • Splash of extra virginolive oil
  • Salted ricotta, grated

Instructions
 

  • Cut the aubergines in 3-4 mm thick sliceslengthways and grill them. Keep aside thelonger slices and put all the others in theVitamix container with the cheese, a handful ofbreadcrumbs, most of the basil leaves, seasonand secure the lid
  • Start the Vitamix on speed 1 and increase slowlyto 8 until you have a thick cream, use the tamperif you need to
  • Spread 2 tbsp of the mixture on the tip of eachslice and then roll it to form small tubes
  • Put the tomatoes and garlic in the container,season and secure the lid. Start the Vitamix onspeed 1, increase to 10 and blend for 6 minutes
  • Pour the sauce into a pan and carefully lay theaubergine rolls on top
  • Season with the extra virgin olive oil and garnishwith the remaining basil leaves, a sprinkling ofgrated ricotta and bake for 6 minutes until goldenand crispy on top
