Course Sauce

Ingredients
  

  • 1 kg ripe tomatoes
  • 1 red pepper
  • 250 g stale bread
  • 15 basil leaves
  • 2 cloves of garlic
  • 500 ml of vegetable stock
  • Extra virgin olive oil
  • 1/8 tsp salt (optional)
  • 1/8 tsp pepper

Instructions
 

FOR THE BREAD CROUTONS

  • Put the bread in the Vitamix container and securethe lid
  • Start gradually from speed 1 to speed 8 in pulsesof 3 seconds, each until the bread is roughlychopped into little chunks
  • Fry the bread with garlic and oil in a frying panfor a few minutes until golden

FOR THE SAUCE

  • Put tomatoes and peppers in the Vitamixcontainer and secure the lid
  • Start the Vitamix gradually on speed 1 andincrease to 10 in order to obtain a fine texture
  • Add the bread to the sauce, add a few leavesof basil, the broth, season with salt and cook in apot slowly for 1 hour. Serve the tomato soup withraw olive oil, basil leaves and a pinch of pepper
