Ingredients
  

  • 150 g dry rice (for bestresults use short-grainnon-glutinous white rice)
  • 80 ml soy milk
  • 120 ml maple syrup
  • 2 tbsp (30 ml) lemon juiceor freshly squeezed lemon
  • 1 tsp salt
  • 60 g desiccated coconut
  • 80 ml rapeseed oil, coconutoil or olive oil
  • 1 tbsp baking powder
  • 1 orange (thinly sliced,including the rind)
  • 1 tbsp maple syrup

Instructions
 

  • Wash rice, put it in a bowl and add 500ml water.Let the rice sit for 2-3 hours
  • Preheat oven to 180°C. Line a 7-8 cm x 20 cmloaf tin with baking paper
  • Drain the soaked rice thoroughly
  • Place rice, soy milk, maple syrup, lemon and saltinto the Vitamix container in the order listed andsecure the lid
  • Turn the machine on and slowly increase speedto 10
  • Blend for 1 minute, then scrape down the sidesof the container with a spatula
  • Turn the machine back on and slowly increasespeed to 10 and blend for 1 minute, then scrapedown again
  • Add the coconut to the container. Turn on andslowly increase speed to 10. Blend for 1 minute
  • Add the oil to the container and turn the machineon again. Slowly increase speed to 5 and blendfor 1 minute.
  • Pour the mixture into a mixing bowl, add thebaking powder and mix by hand
  • Pour the mixture into the bread pan, top with thesliced orange and maple syrup
  • Bake 45-50 minutes or until a toothpick insertedinto the centre comes out clean
