Course noodles

Ingredients
  

  • 200 g thin white noodles(angel hair style)
  • 500 ml water
  • 350 g black soybeans
  • 1 tbsp peanut butter (whynot try making a batch ofthis in your Vitamix too)
  • 200 g ice
  • Pinch of salt
  • Small amount of slicedcucumber and carrotto garnish
  • 1 boiled egg per serving(sliced) to garnish

Instructions
 

  • Soak the black soybeans in water for 6 hours,then boil them for 30 minutes
  • Put the water, boiled beans, peanut butter andice into the Vitamix container in the order listedand secure the lid
  • Blend on speed 10 until everything is wellcombined (approx. 45 seconds). Chill the soup
  • Boil the noodles for the recommended timeon the packet then rinse them with cold waterand drain
  • Put the noodles into a bowl and pour overthe cold soup. Add a pinch of sugar or salt forseasoning if necessary
  • Garnish with sliced cucumber, carrot, and thesliced boiled egg on top
