Ingredients
  

  • 75 g hazelnuts (ideallysoaked the night beforeand rinsed before use)
  • 500 ml of water
  • 100 g cassava flour(substitute with regularflour or tapioca starch forgluten free)
  • 100 g whole rice flour
  • 1/2 tsp salt (optional)
  • 1/2 tsp vanilla powder
  • 3 large eggs
  • 4 dates, pitted
  • 2 tsp olive oil

Instructions
 

  • Pour the water into the Vitamix container, thenthe hazlenuts and secure the lid
  • Blend for 2 minutes on speed 10
  • Add the cassava flour, rice flour, salt, vanillapowder, eggs, light cane sugar and olive oil
  • Mix on speed 5 for about 1 minute, until themixture is well combined
  • Let stand at least 1 hour
  • Oil a pan and cook your crepes on high heat, turnthem over halfway through cooking
