Course Dessert

Ingredients
  

  • 175 g medjool dates (pitted)
  • 75 g slivered almonds
  • 75 g cashews
  • 35 g cacao powder
  • 70 g coconut oil (melted)
  • 20 g shredded coconut
  • Pinch of Himalayan sea salt
  • 1 tbsp chia gel (mix 2 tspchia seeds with 2 tbspwater to form a gel)

Instructions
 

  • Put all the ingredients into the Vitamix containerin the order listed and secure the lid
  • Turn speed to 10 and pulse the machine onand o‘ 5 times for 3 seconds each time to getthings moving
  • Select speed 1. Turn the machine on and quicklyincrease the speed to 10. Use the tamper to pressthe ingredients into the blades throughout
  • Blend for 45-60 seconds or until you have a nicedough consistency
  • Roll the balls in any extra shredded coconutto coat and place on a plate lined withgreaseproof paper
  • Put the balls in the freezer for about an hour andtake out just before serving
