Ingredients
  

  • 300 g stale sourdoughbread (or other crustybread)
  • 2 parsnips, peeled anddiced
  • 100 g smoked cheddarcheese, grated (optional)
  • 3 spring onions
  • 3 garlic cloves, peeled
  • 1 tbsp olive oil
  • Pinch of salt (optional)
  • 75 g cherry tomatoes,halved
  • 60 g kale
  • 25 g grated Parmesancheese (optional)

Instructions
 

  • Preheat the oven to 180C (350F)
  • Place the eggs and 300ml of the milk into theVitamix container and secure the lid. Startblending on speed 1 and slowly increaseto 10. Blend for 10 seconds
  • Place the bread into a bowl, pour the liquid overthe bread and let soak for 1 hour
  • Place the parsnips in a pan and cover with theremaining milk. Add salt and simmer until theparsnips are soft, about 35 minutes. Place theparsnips and milk mixture into the Vitamixcontainer and secure the lid. Select speed 1, startthe machine and slowly increase to speed. Blendfor 1 minute. Reduce the speed to 1, remove thelid plug and add 50g of the smoked cheddar(optional). Blend for an additional 30 secondson 10
  • Slice the spring onions and garlic and sautéein 1 tbsp of oil until soft
  • To assemble the dish, spread a layer of the pureeover the bottom of a 23cm x 23cm baking pan.Add the soaked bread in an even layer and pourthe extra milk and egg mixture over the dish.Sprinkle the onion and garlic mixture over thebread. Top with kale and cherry tomatoes. Placethe rest of the parsnip puree over the top andsprinkle with the parmesan and the rest of thesmoked cheddar (optional)
  • Bake for 30 to 45 minutes
