Ingredients
  

CRUST

  • ¾ cup graham cracker crumbs
  • ¼ tsp. ground cinnamon
  • 2 tbsp. butter, melted

FILLING

  • 1 ½ lb. cream cheese, room temperature
  • ¼ cup sour cream, room temperature
  • 3 large eggs, room temperature
  • 2/³ cup confectioner’s sugar
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • 2 tbsp. flour

SOUR CREAM TOPPING

  • ½ cup sour cream
  • 3 tbsp. confectioner’s sugar
  • ½ tsp. vanilla extract
  • whipped cream, for serving

Instructions
 

  • Combine all the crust ingredients in a bowl and mixuntil crumbly.
  • Press the crust evenly onto the bottom and slightlyup the edge of a 6-in. springform pan. Place the Panon an Air Flow Rack.
  • Place the Rack in the air fryer. Press the PowerButton and decrease the cooking temperature to350° F/175° C and the cooking time to 5 mins. tobegin the cooking cycle.
  • Combine the cream cheese and sour cream in aseparate bowl and beat until creamy.
  • Add the remaining filling ingredients to the bowl andmix until fully incorporated.
  • Pour the filling into the pan.
  • Cover the cheesecake with foil. Place the pan ona Rack.
  • Place the Rack in the air fryer. Press the Power Buttonand then the Baking Button (320° F/160° C) andincrease the cooking time to 60 mins. to begin thecooking cycle. When the cooking cycle is complete,set the cooking time to 45 mins. for a total cookingtime of 1 hr. 45 mins.
  • Let the cheesecake cool for 2 hrs. in the pan.
  • Refrigerate the cheesecake for at least 6 hrs.(preferably overnight).
  • Combine all the topping ingredients in a bowl andwhisk until smooth.
  • Carefully remove the cheesecake from the pan.
  • Spread the sour cream filling over the top of thecheesecake.
  • Serve with whipped cream.
