Rhubarb Custard Pie

Mygrandmother and mother have perfected thisrecipe over the years. Rhubarb is not ascommon in the winter, but I have successfullyused frozen rhubarb in this recipe or otherfruits that are tart.

Ingredients
  

Crust:

  • 1 cup flour
  • 1 stick butter
  • 1/2 cup sugar

Custard filling

  • 4 cup cut rhubarb
  • 2 eggs
  • 1/3 cup flour
  • 1 1/2 cup sugar
  • 1 tsp vanilla
  • 3 tsp milk

Instructions
 

  • Preheat oven to 425 degrees
  • Cut rhubarb in small 1/2 inch pieces
  • Whisk egg with sugar and then add everything else but rhubarb and mix by hand or in mixer
  • Fold in the cut rhubarb
  • Put the rhubarb filling in the prepared pie crust
  • Bake for 10 minutes at 425 degrees
  • Lower temperature to 350 degrees for 25 minutes
  • Continue to check the pie every 10 minutes until the custard is firm or the top is starting tolightly brown. A knife or toothpick should come out without liquid.
