Ingredients
  

  • 1 1/2 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 3/4 cup sweetened condensed milk
  • 3 large eggs
  • 1 1/2 cup sweetened shredded coconut

Instructions
 

  • Preheat oven to 325 degrees. Grease a loaf pan.
  • In a bowl combine our, salt and baking powder, set aside
  • In the bowl of a stand mixer, cream butter sugar until light and fluffy, about 2 minutes.
  • Add sweetened condensed milk and mix for only a few seconds. Add in the dry ingredients, mixing justuntil the flour is mixed in (don’t over mix).
  • Add eggs, one at a time. Add the extracts and shredded coconut. Dump batter into prepared pan,smoothing the top with a spatula.
  • Bake for 50-60 minutes, or until a thin knife inserted into the center comes out clean
  • If the top of thepound cake looks like it’s browning too quickly, place a piece of foil over it for the remainder of its timein the oven.
  • Cool in pan for about 10 minutes, then finish cooling on a wire rack. Store in an air tightcontainer for up to 3 days at room temperature.
