Ingredients
  

  • 8 oz jumbo pasta shells
  • 3 tbsps coconut oil
  • 1/2 Vidalia onion, chopped
  • 24 oz spaghetti sauce
  • 1/2 cup water
  • 12 oz plant-based groundburger
  • 10 oz white mushrooms,chopped
  • 2 cups broccoli, chopped
  • 10 oz dairy-free cheese
  • 1/4 tsp pepper

Instructions
 

  • Cook the pasta and set aside.
  • Put the ‘cheeze’ in a food processor and pulse intosmaller pieces or use shredded if available.
  • Heat 1 tablespoon coconut oil in a large skillet.
  • In the skillet, brown the ground burger or sausage. Takeout of the pan and set aside.
  • Add another tablespoon oil in the skillet.
  • Sauté the onion about 10 minutes and set aside.
  • Add oil and sauté the mushrooms about 10 minutes.
  • Steam or sauté the broccoli for 5 to 10 minutes.
  • Put the spaghetti sauce, mushrooms, onions, “burger”and broccoli back into the skillet. Add the 1/2 cup water, stir.
  • Cook at medium heat for 10 minutes.
  • Put 1/4 cup of the skillet’s sauce in the bottom of acasserole dish.
  • Add about half of the cheese into the sauce, mix well.
  • Stuff the shells with the sauce mixture and lay in theprepared casserole. Pour the rest of the sauce over.
  • Sprinkle the remaining cheese all over the top.
  • Bake at 350 degrees for 20 minutes.
