Ingredients
  

  • 1 large can green pigeonpeas
  • 1 block queso fresco
  • 1/4 cup Cilantro, finelychopped
  • 1/4 cup Scallions, chopped
  • salt & pepper, to taste
  • 1/4 cup Parsley, chopped
  • 1 tbsp Garlic, minced
  • 1/4 cup white vinegar
  • 1/2 canola oil
  • Adobo, to taste

Instructions
 

  • Cube cheese into small pieces
  • Finely chop the cilantro and parsley
  • Chop scallions
  • Drain the peas and pour into a large bowl
  • Add cheese, herbs, oil and vinegar
  • Mix well
  • Season to taste
  • Chill & serve!
