Ingredients
  

  • 1 whole chicken
  • 1 1/2 tbsp curry powder
  • 1 tbsp garam massala
  • 1 tbsp roasted groundcumin (geera)
  • 2 tbsp ground garlic
  • 1/2 chopped onion
  • 2 broad leaf thyme[puddina (optional)]
  • 2 stems scallions
  • 1 large potato
  • 4 tbsp vegetable oil
  • 1 tsp salt
  • pepper to taste (optional)

Instructions
 

  • First cut up the chicken, remove and discard skin andwash thoroughly, drain dry. Set aside.
  • In a bowl add the garlic, curry powder, cumin, garam massala, and onion.
  • Add some water and mix into a paste (not too thick).
  • Set stove to medium heat.
  • Heat the oil and add the curry paste to it , cook for 2mins. stirring to prevent burning.
  • In the approx 2 mins. the paste will release all thearomas from the spices
  • . If the paste is drying out add a tiny bit of water and stir.
  • After the 2 mins or so, add the chicken and salt, stir wellto coat the chicken with the paste. Cover the pot and let the chicken release its own juices and evaporate.
  • Stir once during this time.
  • When the water has evaporated, add the choppedscallions and the potato cut into about 8 pieces.
  • Add water to the level of the contents of the pot.
  • Let cook until gravy has evaporated.
