Aunt Bea’s Italian Style Stuffed Mushrooms

Ingredients
  

  • 24 medium sizedmushrooms
  • 3 tbsp butter
  • 1/4 cup onion, chopped
  • 1/4 cup red bell pepper,chopped
  • 3 cloves garlic, minced
  • 1 cup Italian style breadcrumbs
  • dash of salt
  • dash of pepper
  • Parmesan cheese, grated

Instructions
 

  • Preheat over to 350 degrees Fahrenheit
  • Clean each mushroom by wiping it down with a damptowel
  • Remove mushroom stems
  • Finely chop stems and set aside.
  • Use 2 Tbsp of butter to sautee onions, bell peppers,mushroom stems and garlic for about 5minutes over medium – high heat.
  • Remove from heat,
  • Stir in breadcrumbs, salt, and pepper.
  • Fill mushroom caps with mixture
  • Melt 1 Tbsp of butter in a 13 x 9" pan in the oven.
  • Place caps, stuffing side up in the pan and sprinkle withcheese.
  • Bake for 15 minutes
  • Broil for 2 – 4 minutes until light brown. (Watch whilebroiling so they don’t burn)
  • Serve hot!
