Ingredients
  

  • 2 egg yolks
  • 6 tbsp butter
  • 1 tbsp water
  • 1 tsp lemon juice

Instructions
 

  • Whisk egg yolks and water in the top bowl of a double boiler.
  • Get the water to a simmer but not a boil.
  • Placebowl on top of simmering water and whisk until it becomes thick and creamy, about 5 min.
  • Reduce the heatto low and add the butter a tablespoon at a time, whisking continually.
  • Remove from heat and stir in thelemon juice.
  • The sauce can sit on warmed water for some time.`
