Ingredients
  

  • 4 boneless skinless
  • chicken breasts, sliced into strips

MARINADE

  • 2 tbsp. hoisin sauce
  • 2 tbsp. teriyaki sauce
  • 2 tbsp. fresh orange juice
  • 2 tsp. olive oil
  • 1 ½ tsp. ginger, minced
  • 1 tsp. garlic, minced

ROLLS

  • 8 (8-in.) flour tortillas
  • ¼ cup softened butter
  • peanut dressing (recipe above)
  • ½ cup shredded
  • Mexican cheese blend
  • ½ cup slivered carrots
  • ¼ cup scallions, thinly sliced
  • ½ cup bean sprouts
  • 3 tbsp. cilantro, chopped

PEANUT DRESSING

  • 2 tbsp. vegetable oil
  • 2 scallions, finely chopped
  • 1 clove garlic, minced
  • ½ tsp. ginger, minced
  • ½ cup creamy peanut butter
  • 2 tbsp. sweet soy sauce
  • 2 tbsp. white wine vinegar
  • 3 tbsp. light brown sugar
  • ¼ cup water
  • ½ tsp. crushed red pepper flakes

DIPPING SAUCE

  • ½ cup coconut milk
  • ½ cup peanut dressing (recipe above)
  • red Thai curry paste
  • crushed red pepper flakes

Instructions
 

  • Place the chicken in a bowl with allthe marinade ingredients.
  • Marinate the chicken for 10 mins.
  • Remove the chicken from themarinade and place the chickenonto the Air Flow Racks.
  • Place the Racks in the air fryer.Press the Power Button (370° F/190° C for 15 mins.) tobegin the cooking cycle.
  • Heat the vegetable oil in asaucepan.
  • Add the scallions, garlic, and gingerto the saucepan and cook for 1 min.
  • Stir the remaining peanut dressingingredients into the saucepan andremove from the heat.
  • Place the coconut milk, curry paste,crushed red pepper, and ½ cuppeanut dressing into a blenderpitcher to make the dipping sauce.
  • Blend until smooth and then coverand refrigerate.
  • Lightly spread soft butter onto oneside of each tortilla.
  • Flip each tortilla and spread therest of the peanut dressing evenlyon each tortilla.
  • Sprinkle each tortilla with thecheese, chicken, carrots, sprouts,scallions, and cilantro. Roll eachtortilla tightly into a cigar shape.Place them on the Racks.
  • Place the Racks in the air fryer. Pressthe Power Button (370° F/190° C)and decrease the cooking time to8 mins. to begin the cooking cycle.
  • Slice each tortilla diagonally intothree pieces.
  • Serve with the dipping sauce.
