Ingredients
  

CRUST

  • ¾ cup graham cracker crumbs
  • ¼ tsp. ground cinnamon
  • 2 tbsp. butter, melted

FILLING

  • 1 ½ lb. cream cheese, room temperature
  • ¼ cup sour cream, room temperature
  • 3 large eggs, room temperature
  • 2/³ cup confectioner’s sugar
  • 1 tsp. vanilla extract
  • ½ tsp. salt
  • 2 tbsp. flour

SOUR CREAM TOPPING

  • ½ cup sour cream
  • 3 tbsp. confectioner’s sugar
  • ½ tsp. vanilla extract
  • whipped cream, for serving

Instructions
 

  • Combine all the crust ingredients ina bowl and mix until crumbly.
  • Press the crust evenly onto thebottom and slightly up the edge of a6-in. springform pan. Place the Panon an Air Flow Rack.
  • Place the Rack in the air fryer. Pressthe Power Button and decreasethe cooking temperature to350° F/175° C and the cooking timeto 5 mins. to begin the cooking cycle.
  • Combine the cream cheese andsour cream in a separate bowl andbeat until creamy.
  • Add the remaining fillingingredients to the bowl and mixuntil fully incorporated.
  • Pour the filling into the pan.
  • Cover the cheesecake with foil. Placethe pan on a Rack.
  • Place the Rack in the air fryer.Press the Power Button and thenthe Baking Button (320° F/160° C)and increase the cooking time to60 mins. to begin the cookingcycle. When the cooking cycle iscomplete, set the cooking time to45 mins. for a total cooking timeof 1 hr. 45 mins.
  • Let the cheesecake cool for 2 hrs. inthe pan.
  • Refrigerate the cheesecake for atleast 6 hrs. (preferably overnight).
  • Combine all the topping ingredientsin a bowl and whisk until smooth.
  • Carefully remove the cheesecakefrom the pan.
  • Spread the sour cream filling overthe top of the cheesecake.
  • Serve with whipped cream.
