Ingredients
  

SPAGHETTI SQUASH LO MEIN

  • 1 spaghetti squash
  • 4 garlic cloves, peeled
  • 2 Tbsp. sesame oil
  • Kosher salt to taste
  • Ground black pepper, to taste

SAUCE

  • 2 garlic cloves, minced
  • 1 oz. ginger, peeled and minced
  • 8 fl. oz. soy sauce or tamari
  • 2 fl. oz. hoisin sauce
  • 1 Tbsp. sriracha
  • 1 fl. oz. rice wine vinegar
  • 2 fl. oz. sesame oil

STIR FRY VEGETABLES

  • 2 oz. carrots, peeled, halved and thinly sliced
  • 2 oz. celery, sliced
  • 2 oz. baby corn, rinsed if canned, thawed if frozen
  • 2 oz. white onion, peeled, halved and thinly sliced
  • 2 oz. snow peas, snapped and trimmed if needed
  • 2 oz. water chestnuts, rinsed
  • 2 oz. bell peppers, julienne
  • 2 oz. button mushrooms, sliced
  • 2 fl. oz. sesame oil
  • 1 Tbsp. sesame seeds
  • 1 oz. scallions, sliced

Instructions
 

  • Cut off the top of the spaghetti squash, then cut it in halfand scoop out the seeds. Place cut side up on a sheet trayand brush with sesame oil. Season with salt and pepperand put the peeled garlic cloves in the center of thesquash. Roast in a 375˚F oven for 30 to 45 minutes or untilthe flesh is easily pierced with a fork. Allow it to coolenough to touch. Using two forks, begin to fluff up theflesh and pull it away from the skin. Do this until all of theflesh is pulled away from the skin and all the pieces areseparated, leaving you with separated “noodles.”
  • Add all the sauce ingredients to a large bowl and whisk tocombine.
  • Preheat a wok or sauté pan and add the sesame oil. Addthe vegetables in order of how long it will take to cookthem: carrots, celery, onions, bell peppers, mushrooms,snow peas, baby corn and water chestnuts. Stircontinuously to avoid burning. Once the vegetables haveslightly caramelized, add the stir-fry sauce and continueto stir, making sure that all of the vegetables are coatedwith the sauce.
  • Once the vegetables are tender and thesauce has reduced slightly, add the spaghetti squash andstir to combine. Once the squash is thoroughly reheatedand has absorbed some of the sauce, turn off the heat andtransfer to a large bowl for family style service. Garnishwith sesame seeds and sliced scallions.
