Ingredients
  

  • 4 oz. spinach
  • 2 eggs
  • 2 tsp. extra virgin olive oil
  • 1 tsp. kosher salt
  • 2 cups all-purpose flour

Instructions
 

  • Quickly blanch the spinach in salted boiling water for15 seconds and cool quickly in a water bath.
  • Removethe spinach from the water bath and squeeze in a cleankitchen towel to remove as much liquid as possible.
  • Transfer to a food processor and add the eggs, olive oil,and salt; blend until smooth. Add the blended spinachmixture to a mixer bowl with the dough hook attachment.On low speed, slowly add the flour until the dough startsto form a ball and pulls away from the hook
  • You mightneed to stop occasionally to scrape down the sides of the bowl. When the dough comes together, form it into a ball,wrap it in plastic, and let it rest at room temperature for30 minutes.
