Course Appetizer

Ingredients
  

  • 2 medium red beets
  • 15 oz. can chickpeas, drained and rinsed
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 garlic cloves
  • 2 Tbsp. tahini
  • ¼ tsp. red pepper flakes
  • ½ tsp. smoked paprika
  • 1 tsp. sea salt
  • 2 Tbsp. extra virgin olive oil
  • ¼ cup chopped dill

Instructions
 

  • Preheat the oven to 375°F.
  • Wrap the beets in aluminum foil and place in a bakingdish. Roast in the oven until very tender when piercedwith a fork, 40 to 60 minutes. Unwrap the foil and letthe beets cool.
  • While the beets roast, add the chickpeas,lemon juice, lemon zest, garlic, tahini, red pepper flakes,smoked paprika, sea salt, and olive oil to the bowl of afood processor. Set aside. When the beets are cool enoughto handle, peel and dice them.
  • Add the diced beets tothe food processor and puree until smooth. Add theadditional lemon juice, garlic, salt, olive oil to adjust tasteto liking. Serve in a bowl and garnish with fresh dill. Servewith crackers or toasted pita bread.
