Ingredients
  

  • 2 PA russet potatoes, 6-7 oz. average
  • 1 Tbsp. butter
  • ½ jumbo yellow onion, julienne
  • 2 garlic cloves, minced
  • 1 quart heavy cream
  • 2 ½ tsp. minced fresh thyme
  • Salt and pepper, to taste

Instructions
 

  • Clean and peel the potatoes, then cut into a medium dice.
  • Heat the butter in a medium saucepot and add the onions,garlic, and potatoes. Sweat the mixture until the onionsare translucent.
  • Add the cream and bring to a boil. Reduceto a simmer and cook until the potatoes are soft. Add thefresh thyme and transfer to a blender.
  • Blend on high until smooth. Season with salt and pepper.
