Ingredients
  

  • 1 tsp. olive oil
  • 1 tsp. minced garlic
  • ½ cup sliced PA crimini mushrooms
  • ¼ cup dry white wine
  • 1 cup chopped spinach
  • ½ cup heavy cream
  • 1/3 cup finely grated Parmigiano-Reggiano cheese
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 2 tsp. butter

Instructions
 

  • Heat a medium saucepan and add the olive oil and garlic.
  • Sauté until the garlic just begins to become fragrant,then add in the mushrooms and cook until they beginto release their liquid.
  • Once the liquid absorbs, deglazethe pan with white wine. Add in the spinach and allow itto cook down.
  • Add in the cream, Parmesan, salt, pepper,and butter and stir while the sauce reduces down to thedesired consistency.
