Ingredients
  

  • 1 oz. powder lye
  • 8 oz. hot water
  • 24 oz. cold water

Instructions
 

  • First make the pretzel dough. Bloom the yeast in ½ cup ofwater. Combine the dry ingredients. Add the remainingwater and bloomed yeast and mix to form a dough.
  • Youmay adjust the dough with small amounts of flour or waterto get the correct consistency. Let it proof for 45 minutes.Scale and roll to a 14” x 8” sheet.
  • Combine the lye with thehot water to dissolve and then add the cold water. Dip itin the lye mix and prepare to fill with the caramel applefilling.
