Ingredients
  

  • 2, 14 oz. packages GIANT precut butternut squash
  • 2 celery stalks
  • 2 Tbsp. olive oil
  • ¼ cup diced onion
  • 1 Tbsp. minced garlic
  • 2 tsp. mustard powder
  • 4 cups Nature’s Promise vegetable broth
  • ½ tsp. ground cayenne pepper
  • 1, 12 oz. package frozen GIANT broccoli florets
  • 1 cup shredded GIANT sharp cheddar cheese
  • Salt and pepper, to taste

Instructions
 

  • Cut the squash into smaller pieces and thinly slice thecelery. In a large pot, heat the oil on medium-high heat.Add the onion and garlic and cook for 5 minutes, untilgolden, stirring often.
  • Add the mustard powder andvegetable broth and heat to a boil on high heat. Seasonwith salt and pepper. Add the squash, celery, and cayenneto the pot. Reduce the heat and simmer for 8 minutes,stirring occasionally.
  • Add the broccoli and cook another10 minutes until the squash is soft. Using an immersionblender or working in batches in a countertop blender,blend the soup until mostly smooth. Pour the soup backinto the pot and stir in the cheese, one handful at a time,until melted. Season with salt and pepper
