Ingredients
  

  • 2 lbs. Beef Flat Iron
  • 1 tsp. salt
  • 1 tsp. pepper
  • 4 oz. Herbed Butter, recipe follows

Instructions
 

  • Trim the beef flat iron, if not already trimmed. Removeexcess fat and silverskin. Optionally, chill the flat iron,uncovered, over night to dry out the surface. This will givethe flat iron a delicious crust on the outside. Pull the flatiron from the cooler and season with salt and pepper. Sitat room temperature for at least 30 minutes.
  • Preheat an oven to 425°F. Heat the olive oil in a largecast iron skillet and sear the flat iron on all sides for 3 to5 minutes per side. Cover the flat iron with the HerbedButter and transfer to the oven. Roast for 10 to 15 minutes,or until the desired internal temperature is reached. Letrest before slicing
