Ingredients
  

  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 lb shrimp, deveined and tails removed
  • Salt and pepper, to taste
  • 3-4 cloves garlic, minced
  • 1 cup cherry, grape or sun dried tomatoes,halved
  • 3-4 cups baby spinach
  • 3/4 cup heavy cream
  • 1/4 cup freshly grated parmesan
  • 2 tbsp basil or parsley, thinly sliced
  • 1 1/2 cups Jasmine rice

Instructions
 

  • Rinse the Jasmine rice under cold water and drain. Cookrice for about 15-25 minutes until tender.
  • Heat oil and butterin a large skillet over medium-highheat.Once the oil issuper hot and the butter has melted,add the shrimp and a generoussprinkle ofsalt andpepper. Sauté for 1 minute.
  • Remove shrimp from pan and set aside. Then, add thegarlic, tomatoes and spinach to the same pan. Sauté for 1minute or until the garlic isfragrant.
  • Stirin the heavy cream, parmesan cheese and basil.Reduce heat to medium and simmer untilsauce isslightlyreduced, about 2-3 minutes.
  • Return the shrimp to the pan and stirto combine. Tasteand adjustsalt if needed.
  • After everything isfinished cooking,serve the shrimpoverrice and enjoy!
