Ingredients
  

  • 2 pie shell crusts(recommend Betty Crocker add water mix)
  • 2 1/2 cups strawberries, washed and cut in half
  • 2 1/2 cups rhubarb, chopped into pieces the same size asthe half-strawberries
  • 1 cup sugar
  • 3 tbsp instant tapioca
  • 1 tbsp flour
  • 1/2 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 3 tbsp butter

Instructions
 

  • Mix rhubarb, strawberries, sugar, tapioca, flour, lemonjuice, cinnamon and vanilla together in a bowl.
  • Make a pie crust bottom and pour the filling out into it. Irecommend the Betty Crocker mixes where you just addwater and roll them out rather than making from scratchor buying pre-made. It has the taste/texture of homemadein a much shorter time! Slice butter into small pieces anddistribute on top of the strawberry-rhubarb filling.
  • Put the top crust on in strips to make a weave/lattice andseal the edges.
  • Bake at 425 degrees for 15 minutes. Turn down to 375degrees and bake for an additional 45-50 minutes. Fillingshould be bubbling and crust golden brown.
