Ingredients
  

  • 4-5 potatoes, peeled and diced
  • 1 lb bag carrots, peeled and sliced
  • 4 stalks celery, sliced
  • 1 large onion, diced
  • 1 lb package of bacon, diced
  • 2 cups half and half
  • 2 cups milk
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 8-oz package shredded cheddarcheese

Instructions
 

  • Chop up the raw bacon, cook until crispy,remove from pan and set aside.
  • Cook the diced onion and sliced celery inthe bacon grease.
  • In a large pot, cook the diced potatoes andsliced carrots in water until tender. Drainthe water.
  • Combine the potatoes, carrots, onion,celery, bacon, half and half, salt and pepper.Stir well.
  • Add the milk to desired consistency (at least2 cups) and stir.
  • Heat through on low.
  • Serve with shredded cheddar cheese on top.
