Ingredients
  

  • 5 lbs sweet potatoes
  • 1/2 cup butter, divided
  • 1 cup coarsely crushed graham crackers
  • 1 cup coarsely chopped pecan halves
  • 1/2 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Instructions
 

  • Preheat oven to 350 degrees. Peel the sweet potatoesand cut into 2 inch pieces.
  • Bring large pot of water to a boil. Cook sweet potatoes10-12 minutes or until very tender. Drain.
  • Meanwhile, melt 5 tbsp of the butter. Combine meltedbutter, graham crackers, pecans, brown sugar andcinnamon in small bowl and set a side.
  • Mash sweet potatoes with remaining 3 tbsp of butter,salt and black pepper. Spoon sweet potato mixture in to a casserole dish. Top evenly with pecan mixture
  • Bake for 20-25 minutes or until topping is goldenbrown.
