New York Style Cheesecake with Strawberry Topping

Course Dessert



  • 1 package graham crackers (I like cinnamon)
  • 1/3 cup granulated or brown sugar
  • 1 stick or 1/2 cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt (I do not add salt as I use salted butter)


  • 40 oz cream cheese
  • 1/3 cup sour cream
  • 1 1/2 cup granulated sugar
  • 2 tsp lemon juice
  • 2 tsp vanilla extract (can add more if you’d like)
  • 2 egg yolks
  • 6 whole eggs


  • 2 lbs fresh strawberries (you can use frozen if not in season)
  • 2 tbsp lemon juice
  • 2 tbsp vanilla extract
  • Pinch salt
  • 3/4 cup granulated sugar


  • Preheat oven to 325 degrees. You can either grease the bottomof a 9 or 10 inch springform pan, or place a circular piece ofparchment paper on bottom.


  • Take graham crackers, sugar, nutmeg and cinnamon and blend together until crushed. Slowly mix in melted butter. Press into bottom of springform pan. Distribute evenly. Bake for approximately 11 to 13 minutes. Edges should be brown. Let cool. Preheat oven to 200 degrees.


  • Blend cream cheese and sour cream until smooth. Add sugar and continue to blend. Slowly add in lemon juice and vanillaextract. Remember to scape sides and bottom of bowl. You do not want chunks of unblended cream cheese. Add eggs one at a time. Increase mixer speed once all are mostly blended into cream cheese mixture. The longer you beat the mixture, the lighter it will be. It should look fluffy. Pour over crust in springform pan. Place on lower rack in oven. Bake untilcenter reaches 150 degrees. This is approximately 2-3 hours. Remove irom oven and increase oven temperature to 500 degrees. Once oven reaches 500 degrees, place cheesecake back in oven on top rack. Bake for approximately 8 minutes to brown the top. Remove and after approximately 5 minutes, run a butter knife around edge of springform pan. Then, chill for 3 hours to room temperature. Then, place in refrigerator and cool several hours, but overnight is ideal.


  • (This is optional and can be any fruit, caramel, etc.)Cut strawberries into 1/4 inch slices. Place all ingredients insauce pan and simmer on medium heat until everythingbegins to thicken. Stir frequently and when thickens, removefrom heat. Let cool down. Do not put on cheesecake untilready to serve
