Ingredients
  

  • 2 tbsp extra virgin olive oil
  • 6 boneless skinless chicken breasts (about 4 lbstotal)
  • Kosher salt
  • Freshly ground black pepper
  • Italian seasoning
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 1/2 cups cherry tomatoes, halved
  • 4 cups baby spinach (exposed stems removed)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup chicken broth (or more to thin creamsauce to desired consistency if needed)
  • Lemon wedges, for serving

Instructions
 

  • In a skillet over medium heat, heat oil. Add chicken andlightly season with salt, pepper, paprika and Italianseasoning. Cook until golden and no longer pink, about 8minutes perside. Remove from skillet and set aside.
  • In the same skillet over medium heat, melt butter. Stiringarlic and cook until fragrant, about 1 minute. Add cherrytomatoes and season with salt and pepper. Stirin heavycream and parmesan and bring mixture to a simmer. Reduceheat to low and simmer untilsauce isslightly reduced, about2 minutes.
  • Add chicken broth if needed to extend sauce and heat.Return chicken to skillet and cook until heated through, 5 to7 minutes.
  • Add spinach and cook untilspinach is beginning to wilt.
  • Serve with rice or over pasta of choice and add lemon wedges.
