Ingredients
  

  • 1 lb ground beef or ground chuck
  • 1 lb sweet Italian sausage
  • 3 cloves garlic, minced
  • 1 yellow onion, diced
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp red pepperflakes
  • 1 tsp oregano
  • 2 tbsp tomato paste
  • 2 large cans San Marzano tomatoes
  • Sprig of fresh basil or 1 tsp dried
  • 3 tbsp unsalted butter
  • Salt and pepperto taste
  • 15 oz ricotta cheese
  • 2 cups hredded mozzarella cheese
  • 1 cup grated parmesan
  • 1 box penne pasta

Instructions
 

  • Brown and crumble meat in skillet. Drain and set aside.
  • In a dutch oven orstockpot,sweat garlic in olive oil over mediumheat. Add pepperflakes and oregano and sauté for 1 minute. Addonion and tomato paste and stir. Add 2 cans of San Marzanotomatoes. Crush tomatoes on side of pan and stir.
  • Add fresh basil and meat to sauce mixture. Partially cover with lidand simmerfor a minimum of one hour on low heat.
  • Uncover. Remove basilsprig and add butter. Add salt and peppertotaste.
  • Boil pasta according to manufacturer’s directionsfor al dente anddrain.
  • In 9×13 baking dish,spread a thin layer ofsauce. Dot the bottom ofthe dish with half of the ricotta cheese. Add a spoonful ofsauce topenne pasta and stir until blended, then add to casserole dish. Pourthe rest of the meatsauce overthe pasta and dot with remainingricotta cheese. Layershredded mozzarella cheese, then sprinkleparmesan on top.
  • Bake at 350 degrees until cheese is melted and lightly browned,about 20-25 minutes.
