For the saddle of veal

  • 2 tbsp oil
  • 1 tsp salt
  • Pepper
  • 1 kg saddle of veal, ready to cook

For frying

  • 2 tbsp oil


  • Heat the oil in a pan and sear thesaddle of veal all over (approximately1 minute per side).
  • Remove the saddle of veal from thepan. Mix together the oil, salt and pepper, then coat the saddle of veal withthe mixture
  • Insert the food probe. Place the saddleof veal on the wire rack. Place the wirerack on the glass tray inside the ovenand cook.
