For the gammon

  • 1 kg gammon (loin), ready to cook

For the pesto

  • 50 pine nuts
  • 60 g sundried tomatoes in oil
  • 30 g flat leaf parsley
  • 30 g basil
  • 1 clove of garlic
  • 50 g hard cheese (Parmesan), grated
  • 5 tbsp sunflower oil
  • 5 tbsp olive oil


  • Place the gammon joint on the glasstray and insert the food probe. Placethe glass tray inside the oven and cook.
  • To make the pesto, toast the pine nutsin a pan. Roughly chop the tomatoes,parsley, basil and garlic.
  • Blend them together with the pine nuts, Parmesanand sunflower oil to make a purée. Stirin the olive oil.

If your sundried tomatoes are drypacked, 30 g will be enough. Before using them, pour boiling water over them and leave to soak for approximately 10 minutes. Then drain off the water.
