  • Springform cake tin,  26 cm

For the dough

  • 150 g self-raising white flour
  • 2 tsp baking powder
  • 80 g caster sugar
  • 1 medium egg, yolk only
  • 80 g butter

For the topping

  • 2 medium eggs
  • 1 medium egg, white only
  • 200 g caster sugar
  • 1 1/2 tsp vanilla paste
  • 34 g custard powder (vanilla)
  • 1 tsp lemon extract or butter-vanilla flavouring
  • 1 kg low-fat quark

For greasing

  • 1 tsp butter


  • Sift together the flour, baking powderand sugar.
  • Add the rest of the ingredients and quickly knead to form asmooth dough.
  • Chill for approximately60 minutes.
  • Grease the springform tin.
  • Roll out two thirds of the dough on thebase of the springform tin.
  • Assemblethe springform tin. Make the rest of thedough into a long roll and press itaround the edge of the tin so that it isaround 2 cm high.
  • To make the topping, stir together allthe ingredients. Pour the mixture ontothe base, levelling it with a spoon.
  • Place the springform tin in the ovencompartment on the wire rack. Bake.
