  • Glass oven dish
  • wire rack


  • 30 g butter
  • 3 tbsp oil
  • 1.2 kg diced beef, ready to cook
  • Salt
  • Pepper
  • 500 gg onions, finely diced
  • 2 bay leaves
  • 4 cloves
  • 1 tbsp brown sugar
  • 2 tbsp plain white flour
  • 1.2 ltr beef stock
  • 70 ml vinegar


  • Heat the butter in a pan. As soon as itbegins to bubble, add a dash of oil andheat.
  • Season the beef with salt and pepperand sear it on all sides.
  • Add the onions, bay leaves, cloves andbrown sugar and cook for a further3 minutes.
  • Dust the beef with flour and fry for afurther 2–3 minutes.
  • Add the beef stock and vinegar, stirringconstantly until you have a smoothsauce.
  • Place the wire rack in the oven compartment. Start the automatic programme or pre-heat the oven using thesettings indicated for cooking stage 1.
  • Place the beef hash in the glass ovendish.

Manual settings:

  • Adjust settings as indicated for cookingstage 2.
  • Place the glass oven dish inside theoven and cook. Stir halfway throughcooking.
  • Before serving, season again with saltand pepper.
