  • 1 wooden skewers
  • 1 Glass tray
  • 1 Food probe


For the fish

  • 1 Australian salmon (1 kg), whole, readyto cook
  • 1 lemon | juice only
  • Salt

For the stuffing

  • 2 shallots
  • 2 cloves of garlic
  • 2 slices of white bread
  • 50 g small capers
  • 1 medium egg | just the yolk
  • 1 tbsp olive oil
  • Chilli powder
  • Pepper

For the glass tray

  • 1 tsp butter


  • Drizzle the lemon juice over the salmon.Season with salt inside and out.
  • To make the stuffing, finely dice theshallots, garlic and bread. Mix togetherthe capers, egg yolk, olive oil, shallots,garlic and bread. Season with salt,pepper and chilli powder
  • Stuff the salmon with the mixture. Sealthe opening with small woodenskewers.
  • Grease the glass tray. Place the salmonon the glass tray and insert the foodprobe. Place the glass tray in the ovenand cook.
