Ingredients
  

  • 1 loaf of bread, sliced (I usually usewhole wheat)
  • 1 stick of butter (4 oz)
  • 1 small onion, chopped fine or minced
  • 1 heart of celery, chopped (the stalks,not the root)
  • 1 quart chicken broth
  • 1 large egg, beaten
  • 1 tsp salt (add more or less, to taste)
  • 2 1/2 tsp poultry seasoning (or 1/2 tspground pepper, 1 tsp ground sage, and 1tsp ground rosemary)

Instructions
 

  • Preheat oven to 375F.
  • Toast the loaf of bread and cut it intocubes just under an inch square (2cm). Iusually stack the slices three high to savetime.
  • In a large stock pot, melt the butter andcook the onion and celery to soften,stirring frequently, about 5 minutes onmedium high heat.
  • Remove from heat, add the bread cubesand spices, and stir to soak up the butter.
  • Add chicken broth, and stir untilabsorbed by the bread.
  • Beat the egg and add it to the mixture, stirring well to mixthoroughly. The entire mixture should be wet by now.
  • Find an ovenproof serving dish large enough to hold all of theresulting stuffing, spray or wipe with oil to keep from sticking,and pack the stuffing loosely into the dish.
  • Bake about 45 minutes uncovered, then remove from theoven and cover until meal time.
  • This can be made an hour of two before the meal is served,and will be fine served without further heating. We like it bestwith turkey gravy, but that’s another recipe altogether
