Just so we’re all on the same page, a whole head of celery is a stalk, a singlepiece is a rib, and the tender, innermost ribs are the heart. It’s unfortunatethat the supple, yellow hearts and leaves don’t get much attention.

  • 1 FASCINERA Chopping board
  • 1 TILLAGD Cutlery
  • 1 GLADELIG Bowl

Ingredients
  

SCRAPS

  • Celery, heart, leaves Dill pickle brine

INGREDIENTS

  • can (425 g) chickpeas, drained and rinsed
  • 1 whole celery stalk, heart and leaves,finely chopped
  • 3 tbsp (29 g) dill pickle, minced
  • 1 tbsp (5 ml) dill pickle brine
  • ½ tbsp (2½ ml) soy sauce
  • ½ tbsp (2½ ml) dijon mustard
  • 2 tbsp (10 ml) fresh lemon juice
  • ½ tbsp (1 g) dill, finely chopped
  • 2 tbsp (2½ g) nutritional yeast
  • 1 tbsp (15 ml) mayonnaise
  • Salt to taste
  • Black pepper to taste
  • dash hot sauce (optional)

Instructions
 

  • Add the chickpeas to a medium bowland smash with a fork until almost all arebroken up.
  • Add the remaining ingredients and mixuntil combined.
  • Taste and adjust seasoning as necessary.The type of chickpeas you use will make adifference. You might want to add a touchmore lemon juice or dill pickle brine. If youlike a little kick, add a few dashes of yourfavourite hot sauce.
