One of my favourite things to make at home is broccoli mac and cheese.As a result, I always have numbs of cheddar cheese and hearty broccolistalks hanging out in the bottom of my fridge. This recipe began as a failedattempt at a play on zucchini bread.

Ingredients

  • Broccoli stalks

INGREDIENTS

  • 4 cups (530 g) whole wheat flour
  • 2 tbsp (26 g) white sugar
  • cup (298 g) sharp cheddar cheese, grated
  • cups (437 g) broccoli stalks, grated
  • ¼ cup (60 ml) olive oil
  • 1 cup (250 ml) water
  • Salt to taste

Instructions
 

  • Preheat the oven to 450°F (230°C).
  • In a mixing bowl, whisk together thewhole wheat flour, white sugar, cheddar,and broccoli stalks.
  • Add the olive oil and water to the mixtureand stir until soft, sticky dough has formed.
  • Sprinkle a work surface with flour anddivide the dough into 2 equal halves.
  • Working from the centre of the dough,roll it into a rectangle that’s about ⅛-inch(3 mm) thick.
  • Using a chef’s knife or pizza cutter, cut thedough into individual crackers about 1x2inches (1½x3 cm). Alternatively, cut thecrackers into squares or diamonds, or usecookie cutters.
  • Transfer the crackers to a parchment-linedbaking sheet.
  • Using a dinner fork, prick each cracker afew times to prevent puffing during bakingand sprinkle with salt.
  • Bake the crackers in the oven for 12 to 15minutes, until the edges are browned.
  • Transfer the crackers to a wire coolingrack and cool completely. The crackers willcrisp further as they cool. Store them in anairtight container for 3 to 5 days.
