A play on the French term for heritage breed or overlookedvegetables, légumes oubliés translates to forgotten vegetables.To clean out the fridge and minimize excess produce that couldgo to waste, combine this with the perfect vehicle: fried rice.

Equipment

Ingredients
  

  • ¼ cup (60 ml) canola orgrapeseed oi
  • 8 oz (225 g) leftover cookedprotein such as meat, tofu,seafood, etc., cut into smalldice of about a ½-inch to 1-inch(1½–2½ cm) cubes
  • 2 cloves garlic, crushed
  • Salt to taste
  • ½ ½ cup (155 g) leftover cookedveggies such as mushrooms,zucchini, bell peppers, etc., diced
  • 3 eggs
  • 2 cups (528 g) cooked rice,grains, or quinoa
  • 1 cup (30 g) leafy greens suchas spinach, arugula, bok choy,kale, etc.
  • 2 tbsp (30 ml) soy sauce

Instructions
 

  • Over high heat, add the canola or grapeseed oil to thepan. Sauté the protein for 2 to 3 minutes. Add 1 clove ofcrushed garlic and season with salt. Sauté for anotherminute. Transfer to a large plate and set aside.
  • Sauté and season the veggies the same way.Transfer to a large plate and set aside
  • Lower the heat to medium and scramble the eggs.This is important: drag the cooked egg from the outsideof the pan towards the centre, allowing the runny portionto make contact with the pan. Cook these eggs a littleharder than scrambled eggs. If undercooked, they’ll blendwith the rice—I love big chunks of egg in my fried rice.
  • For the rice or other grains, don’t overcrowd the pan.Turn the heat back to high and fry in batches to preventit from turning mushy. Add more canola or grapeseedoil if needed.
  • Once the rice or grains have has been fried and warmedthrough, add the leafy greens and soy sauce, and thecooked protein and veggies. Stir together and serve.

Notes

A non-stick or carbon steel wok is ideal, but a deep frying pan is also a good option. A well-seasoned cast-iron pan also works, but it’s heavy and might require more oil.
