It can be enjoyed as anappetizer or at a cocktail party. As an addedbonus, banana peel contains even morenutrients than the flesh.

  • Cilantro stems
  • Bruised apples

BANANA PEEL CHUTNEY

  • 5 banana peels, trimmed and chopped
  • 2 tsp (4 g) mustard seeds
  • 1 tsp (4 g) cumin seeds
  • 2 tsp (4 g) ginger, finely chopped
  • 1 tsp (3 g) black peppercorns, freshly cracked
  • ½ tsp (1½ g) turmeric
  • ¼ tsp (0.75 g) ground cardamom
  • 1 tsp (15 ml) canola oil
  • 1 tsp tbsp (10 g) shallot, finely minced
  • 1 serrano chili pepper, thinly sliced
  • 2 cloves garlic, finely minced
  • 1 green apple, with peel, chopped into ½-inch(1½ cm) chunks
  • 3 (45 ml) rice vinegar
  • 1 (1 g) cilantro, finely chopped

PRAWNS

  • 24 BC sidestripe prawns or 16/20 shrimp, shell on
  • 24 6-inch (15 cm) bamboo skewers
  • ¼ tsp (¼ g) dry oregano
  • ¼ tsp (¼ g) ground ginger
  • ¼ tsp (½ g) ground cardamom
  • ¼ tsp (¾ g) garlic powder
  • ½ tsp (1 g) cayenne pepper
  • ½ tsp (3 g) flaked sea salt
  • Banana peel chutney

Instructions
 

BANANA PEEL CHUTNEY

  • In a heavy-bottomed pot combine thebanana peels with enough water to cover.Over medium-high heat boil the bananapeels for 3 minutes. Drain and set aside.
  • 2 In an unoiled heavy-bottomed saucepan,toast the mustard seeds and cumin seedsover medium-high heat for about 1 anda half minutes or until fragrant. Removefrom heat and allow to cool. Crush coarselyusing a mortar and pestle. Stir in 1 tsp(2 g) of the ginger, cracked peppercorns,turmeric, and cardamom, and set aside.
  • Add the canola oil to the pan and warmover medium-low heat. Add the shallot,serrano chili pepper, garlic, and theremaining 1 tsp (2 g) ginger, and cookfor 5 minutes, stirring regularly. Addthe toasted spices, boiled banana peels,and chopped green apple. Cook for anadditional 15 minutes or until the appleis soft. Remove from heat and stir in ricevinegar and cilantro. Cool completely.
  • Transfer to a sterilized jar, cover andrefrigerate for 1 day to allow flavoursto develop.

PRAWNS

  • Soak the bamboo skewers in coldwater overnight.
  • Clean the prawns, leaving shells intact,and combine with all the spices and seasalt. Toss until prawns are evenly coated.
  • Preheat a grill to high.
  • Place 1 prawn on each skewer, insertingthe skewer from tail to head. Once allprawns are skewered, grill for 3 minuteson each side, or until cooked through.
