  • 4 baby cabbages
  • Olive oil
  • 60 g almonds, toasted
  • 1 large red chilli, seeded and finely sliced
  • 2 TBS mint
  • 1/2 lemon, zested and juiced
  • 1 TBS maple syrup



  • Preheat the oven to 200°C


  • Rinse the cabbages and slice them in half.
  • Brush both sides with olive oil, season with salt and pepper and put them onto a baking paper-lined tray.
  • Roast for 20 – 30 minutes, until golden, turning them over half way.
  • Roughly chop the toasted almonds.
  • Mix them in a bowl with the chilli, mint, lemon juice, lemon zest, maple syrup and 2 tsp of olive oil.
  • Season to perfection.
  • Drizzle the dressing over the roasted cabbages.


This is a great way to add a funky, low-carb side dish to any meal. You can use any nuts you like and switch the mint for basil.
