Mama G’s Herbed Fillet of Beef

  • 12 kg beef fillet
  • 2 tsp ground black pepper
  • 80 ml olive oil
  • 30 ml white wine vinegar
  • 30 ml mayonnaise
  • 15 ml mustard
  • 10 ml Worcestershire sauce
  • 15 ml chopped capers
  • 4 tsp chopped parsley
  • 4 tsp chopped chives
  • 1 tsp chopped thyme
  • 2 tsp chopped marjoram
  • 40 g shaved parmesan



  • Preheat the oven to 210 °C. Trim the fillet of sinew and fat.


  • Tie meat with string at regular intervals to maintain shape.
  • Season with salt and pepper.
  • Heat a drizzle of oil in a heavy-based pan and brown meat on all sides.
  • Place meat in a roasting pan and cook for 20 – 30 minutes in the oven.
  • Cool, cover and refrigerate.
  • Divide oil and vinegar between two bowls.
  • Add the mustard and mayonnaise to one bowl.
  • Add the Worcestershire sauce, capers and herbs to the other bowl.
  • Season and mix them both well.
  • Cut the beef into thin slices.
  • Pour the mayo dressing onto the base of the serving platter.
  • Arrange overlapping slices of beef on top of the mayo dressing.
  • Before serving, drizzle over the herb dressing and sprinkle over the Parmesan shavings.
  • Garnish with sprigs of thyme.


You can chill the fillet in the freezer for a few hours to make slicing easier.
