Ingredients
  

  • 2 hot cross buns
  • 1 egg
  • 60 ml milk
  • 1 tsp cinnamon
  • 1 tsp range zest
  • 30 g protein powder
  • 2 x 60 g yoghurt
  • 30 g nuts
  • 1/2 cup mixed berries

PREPARATION

  • Preheat the oven to 180′ C

METHOD

  • Slice the hot cross buns in half.
  • Whisk the egg and the milk together and stir through the cinnamon and orange zest.
  • Add some salt and pepper.
  • Dip the hot cross buns into the mixture, flipping them over.
  • Place them into a greased oven proof dish.
  • Pour over the egg mixture.
  • Leave them for about 20 minutes to absorb the liquid.
  • Bake in the oven for 20 – 30 minutes.
  • Stir the protein powder into the yoghurt.
  • Toast the nuts.
  • When the hot cross bun pudding is ready, it will still have a wobble in the middle.
  • Divide between two bowls and serve with the yoghurt.
  • Sprinkle over the nuts and top with some berries.

Let’s be honest! It’s Easter and we’re all going to eat Hot Cross Buns. So while you might want to keep this recipe for your 1.5 days off, we’ve spiced it up so you can actually make a meal of it. If you’re vegan, simply serve a hot cross bun with some coconut yogurt and berries.
