TURKEY TORTILLA SOUP

Course Appetizer

Ingredients
  

  • ½ stick of butter
  • ½ c oil
  • 1 large onion, chopped
  • 3 fresh jalapenos, seeded and chopped
  • 4 cloves garlic, minced
  • 2 large carrots, diced
  • 6 ribs celery, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 3 tsp red pepper sauce
  • ½ c flour
  • 1 14 oz can chopped tomatoes (I use Rotel)
  • 4 10 ½ oz cans chicken broth (or 2 large cartons)
  • 1 pound cooked turkey, cut in bitesize pieces
  • 8 corn tortillas, cut into strips

Garnishes:

  • 1 cup sour cream
  • 3 diced avocados
  • 1 cup cheese
  • ½ cup sliced green onions or chives

Instructions
 

  • Heat butter and oil in a large pot.
  • Sauté onion, jalapeno, garlic, carrots, andcelery.
  • Simmer 5 minutes. Stir in cumin, chili powder, salt,lemon pepper, pepper sauce, and flour.
  • Add tomatoes and chicken broth. Simmer 45minutes.
  • Add cooked turkey and tortilla strips and simmer15 minutes
  • Add garnishes of choice.
